What is Bombay Pulao Recipe and how to Make It?
Bombay Pulao is also known as Tava pulao, is a famous Mumbai street food in which cooked rice is sauteed mixed vegetables and flavored with Pao Bhaji Masala. Since it cooked on a flat surface known as Tawa, it has got its name. Majorly consumed as the main dish in lunch and dinner, it goes well with spicy raita or yogurt.
Special Tips to Make Bombay Pulao
- You can also boil all the veggies in the water along with rice to speed up the process.
- You can add veggies of your choice in this recipe.
- Instead of stir-frying, you can also boil the veggies or shallow fry it, depending upon your choice.
Cooking Rice
Rinse the rice 2-3 times and soak rice for 15 minutes and boil in water till it is cooked thoroughly.
Making tawa pulao recipe
Preheat some oil in a large skillet (tawa) on medium heat. Add cumin seeds and let it to sizzle. Sauté it thoroughly and then add ginger paste, garlic paste, and green chilies. Again sauté it. Once the raw aroma of ginger-garlic leaves, add onions, capsicum, green beans, peas, and carrot and sauté well. Sprinkle some salt to expedite the cooking process.
Cook till the onions turn translucent, and vegetables are cooked slightly. Add tomatoes and mix it well. Cook it until the tomatoes turn soft and mushy. Add red chili powder, turmeric powder, and pav bhaji Masala in it and mix it well.
Once the oil starts leaving the sides add cooked rice, along with salt and some pao bhaji Masala and mix it properly without breaking the rice. Cook for another 2 minutes, so the rice gets heated through well.
Lastly, add some lemon juice, and add coriander leaves and mix it gently. Turn off the flame. Top it with some butter and serve hot.
