Tips to Make A Brown Sugar Shortbread Cookie

  • If you don’t get xanthan gum, you can skip it from the recipe. Basically it is used to prevent the cookies from spreading.
  • Don’t overmix butter while preparing a dough as it can become fluffy and can turn the texture of cookies to either very light or crumbly.

Preheat oven at 300 degree F and place parchment paper on it. Take a small mixing bowl and add white rice flour, sweet rice flour, cornstarch, baking powder, salt and xanthan gum in it and mix well.

In a bowl, beat butter till becomes creamy. Add sugar and vanilla extract to it and blend well. Beat it using hand mixer until a thick paste forms. Add dry ingredients and turn on the mixer till dough is formed. Scrap the sides of bowl and mix well.

Sprinkle white dough flour on your countertop and roll the dough in the shape of a disk, using a rolling pin and see the dough is ¼ inch thick. Using a cutter cut the cookies and spread it on baking sheet, about 2 inches apart. Chill the cookies in fridge for 10 minutes.

Bake until cookies turn lightly golden brown on the edges. It should take about 30 minutes. Let the cookies remain on the baking tray for 5 minutes till they cool down and then store it in an airtight container and enjoy it.
