What is Chicken Biryani Recipe and how to make it?
Chicken Biryani is a fragrant and savory Indian rice dish made with fluffy rice layered in the spiced marinated chicken. It is a great one-pot recipe that is slow-cooked by layering the rice with marinated chicken along with caramelized onions and flavourful spices.
Tips to make Chicken Biryani:
- Do not use sour curd or yogurt.
- We advise you to cook chicken biryani in a heavy-bottomed pot, else chicken pieces can be burnt or scorched.
Marinating chicken
Let’s begin with the recipe with marinating chicken. For that, combine vegetable oil, garlic, ginger, chili peppers, coriander, garam masala, yogurt, lemon juice, turmeric powder, red chili powder and salt in a large bowl and mix it all. Add the chicken pieces and coat it thoroughly in the marinade. Allow it for marination for at least 1 hour.
Cooking Chicken Biryani
Take a pot which is wide enough to hold the chicken. Add some clarified butter in it and let it clutter. Add bay leaf, crushed cloves, cumin seeds, and onions. Sauté it till they are well caramelized. It will take around 15 minutes. Add marinated chicken and sauté it well. Cover the pot and cook it for on low flame till chicken is soft cooked.
While the chicken is marinating, rinse the basmati rice in water and soak it for 15-20 minutes.
Layering for Biryani
Layer chicken at the bottom evenly and spread a layer of rice over the chicken. Add 3 cups of water, ½ tsp salt and mix it well. Taste the water which should be slightly salty. Add 2 cups of water across the sides and on top of rice. Sprinkle some coriander leaves and cover the pot with a lid. Let it cook until rice is done as per your liking.
Once cooked properly, gently fluff the topmost layer of rice and mix it well with the bottom layer of chicken. Be careful while mixing the rice. Gently mix it without breaking the rice grain.
Your chicken Biryani is ready. Garnish chicken biryani with mint and coriander leaves serve it hot with raita (salad yogurt) or pickle.
