Making Enchilada filling
Add 2 tbsp of oil in a skillet and heat it on medium flame. Combine onions, bell pepper in it and cook until soft. Now, combine green chilies, beans, corn to the skillet and mix well. Combine chicken and pour in enchilada sauce all over the surface of the skillet and toss well. Cook the veggies until tender and well combined.
Stacking Layer
After that, preheat oven to 380 degrees F. Take a large baking dish and coat it with cooking spray. Start by spreading a layer of 1/4 cup of enchilada sauce on the baking sheet’s surface. Place 4 halves of tortillas on the sauce in order to cover the bottom of the dish. Spread a layer of chicken filling then adds shredded cheese on it.
Repeat the same process one more time by adding a layer of enchilada sauce, tortillas, chicken filling and then adding cheese on it. Spread the remaining tortillas halves on the top and add leftover sauce on it and sprinkle the remaining cheese over the top.
Baking the Dish
Spray foil with cooking spray and cover the baking dish with foil. Place the baking dish in the oven and bake it for 30 minutes.
After 30 minutes, uncover the baking dish and bake it for an additional 5 minutes or until cheese is fully melted. Let it sit for 5 minutes and garnish it with fresh cilantro and serve it hot.
