In a medium bowl, join the ground chicken, bread crumbs, egg, Parmesan cheese, garlic parsley, salt, and pepper together. Blend all the ingredients well and form the mixture into 1-inch (2 cm) meatballs. You should have 18-20 meatballs in total.

Take a large-sized pot, heat 1 tbsp of olive oil on it. Cook meatballs in the oil on all sides until the dark color is received. It will take around 4-5 minutes. Once done, transfer the bowl into a separate dish and set aside.

Take the same pot, heat 1 tablespoon of oil. Combine the onion, carrot, and celery and cook over medium flame for 3-4 minutes until soft. Add garlic in the mixture and cook until fragrant, for about 1-2 minutes
