Native to Mexican Cuisine, fajitas generally consists of strips of meat, and chopped veggies and further wrapped in tender tortillas along with desired toppings. In this recipe, chicken fajita is cooked with other ingredients including bell peppers, onions, and tomatoes along with seasoning mixture together in a Crockpot for 5 -6 hours which bring juicy and flavorful taste to it. These fajitas are healthy, easy and quick to cook, makes a delicious meal which you throw together in the morning and can enjoy in the evening.

Tips to make Crockpot Chicken Fajitas Recipes:

  • You can replace seasoning mixture with one packet of either fajita or taco seasoning.

In a slow cooker, pour in half of the canned tomatoes at the bottom and spread evenly into a layer. Layer half of the onions and pepper on it and sprinkle some garlic on it. Top it with chicken skinless and boneless chicken breasts.

Take a medium-sized bowl and add cumin, chili powder, paprika, coriander, salt, and ground black pepper and whisk all the ingredients well. Dredge half of the seasoning over the chicken breasts evenly and flip the side to season it with the remaining seasoning.

Add remaining canned tomatoes over the seasoned chicken breasts and then spread a layer of remaining pepper and onions on it.

Cover the lid and cook the chicken and veggies on high heat for around 3 hours or you can simply put on low heat for 5 hours. The chicken must be cooked properly and veggies should be tender.

Remove the chicken from the crockpot and shred into pieces using a fork. Transfer this chicken back into the crockpot.

Add freshly squeezed lime juice and honey into the pot and toss everything well.
