What is curd rice recipe and how to make curd rice?
Curd rice, also known as thayir sadam or Perugu Anna, is a famous south Indian rice dish in which soft rice is mixed with plain curd and flavored with spices. There are several ways to make this curd rice recipe, depending on the region. Out of all, the simplest way is to make curd rice by mixing cooked rice, curd, and salt. You can flavor this recipe with your choice of spices and herbs and can combine some lentils in the curd rice recipe.
Tips to make Curd Rice or Thayir sadam
- You can add cashews or raisins to the curd rice as per your liking to make it more delicious.
- Use plain curd without butter as it will make tasty curd rice. If the curd is sour, then you can add more milk to it.
- In this recipe, we have used homemade curd, so we recommend you that for this curd rice recipe. Homemade curd has entirely different taste and flavor as compared to the curd bought from the stores. Using homemade curd will give a unique flavor to your recipe.
Steps to follow
Wash 1 cup of rice a few times and cook it in a pressure cooker with 3 cups water and 1/2 tsp of salt. Pressure cook it for 2 whistles on high heat and switch off the flame. Keep it aside and let the pressure release out of cooker on its own. Once the rice is adequately cooked, transfer it in a large bowl and let it cool down.
Pre-heat 2 tbsp of cooking oil in a pan and add mustard seeds, cumin seeds in it. Once it starts spluttering, combine urad dal and sauté it till brown. Also, add grated ginger, curry leaves, dry red chilli, and sauté well for a minute. Switch off the flame and let this tempering cool down in order to bring this tempering at room temperature.
Take a bowl and add plain curd in it. Add some milk and whisk the curd properly. Add this curd and milk mixture in the rice and mash it little using spoon’s backside. Mix it thoroughly.
Once done, add grated carrot, chopped coriander leaves, and green chili and mix it properly with a spoon. Also, add tempering/tadka in this curd rice mixture and stir it well.
Your curd rice is ready, garnish it with pomegranate and serve with pickle or Papad.
