What is Dutch Meatball Soup and How to make it?
This soup is the perfect choice for the Sunday lunch or evening meal. Dutch vegetable soup is known as groentesoep met balletjes. You need only one pot to make it and it will be ready in 30 minutes. This is a simple and healthy soup which is prepared by using vermicelli pasta, fresh herbs, vegetables and small beef meatballs.
Tips to make Dutch meatball soup:
- You can make the meatballs in a number of ways. You can add eggs, chives, and fewer spices to make them more flavorful.
- You can add any types of vegetables you like such as cauliflower, carrots, celery, peas, mushrooms, beans etc. the more veggies you add in your dutch, the better it will taste.
Take a medium bowl and add ground beef, breadcrumbs, sauce and parsley in it and season it with ground pepper and salt as per your taste. Knead this properly and shape the dough into small meatballs of about 1 tbsp each. Keep it aside.
Take a medium size pot and add vegetable broth into it. Keep the pot on medium heat and let the broth come to a boil. After that, add carrots, celery, noodles, and meatballs into the pot and give it a nice stir. Reduce the flame to low and let it simmer.
Cook the broth until the veggies and meatballs are not cooked properly. It will take around 10-15 minutes. Check the doneness of the veggies using a fork and once done, remove the pot from heat and garnish it with freshly chopped parsley and chives. Add some salt and pepper to taste and serve it hot.
