These cookies are flavored with vanilla extract and sprinkled with a little confectioner’s sugar. You can shape them into cylinders or logs or other shapes as per your choice before baking. Made without egg, these cookies are very easy to make and are perfect for any feast or party.
Tips to Make a Meltaway Cookies:
- Meltaway cookies are really soft and literally melts in your mouth. If you want to make your cookies a little crispy, add 1/2 cup cornstarch and add 1 and 3/4 cup flour.
Combine flour, cornstarch and salt together in a medium-sized bowl and mix it together.
Using hand or electric mixer, beat the butter and sugar until light and fluffy. Beat in vanilla extract. Add the flour mixture and mix it until it is incorporated well Roll the dough well into a cylindrical shape and refrigerate it for at least one hour.
Preheat oven to 350 degrees. Grease your baking sheet.
When the dough is firm, cut into ½ inch wide slices and place the cookies on the prepared baking sheet about 1 inch apart. Bake for about 12 - 14 minutes or until the edges of the cookies are brown. Remove from oven and place on a wire rack to cool for about 5 minutes.
Sprinkle about half of the confectioners' sugar on the bottom of the pan and then place slightly cooled cookies on top of the sugar. Pour the remaining sugar in a sieve and sprinkle the tops of the cookies.
