What is Mutton Biryani Recipe and how to make Mutton Dum Biryani?
Mutton Biryani is another popular dish that needs no introduction. This lip-smacking rice and mutton dish is considered as a royal recipe that is full of flavor. This dish is not less than bliss, which is flavored with aromatic spices and herbs and beautifully layered rice in juicy and succulent mutton and cooked in dum style. Dum technique brings authentic flavors and taste in this delicious recipe and further garnished with saffron and caramelized onions add more flavor to it. One can surely not resist its deep flavors.
Tips to make Mutton Dum Biryani
- You can add 2 tbsp of raw papaya in the marinade as it works as a meat tender and it is usually added to Mutton Dum Biryani.
- In case raw papaya paste is not available, there are many meat tenders available in supermarkets easily which you can take.
- Add some oil in the stages which will not make your biryani dry.
Marinating Mutton
Firstly, in order to marinate the mutton pieces, combine, salt, red chili powder, turmeric powder, raw papaya paste, ginger garlic paste, yogurt and lemon juice and biryani masala in a bowl and mix it well. Add mutton pieces in this mixture and toss them well. Coat the mutton pieces with the mixture properly and let it marinate for 4 hours minimum.
Preparing Rice
Wash basmati rice properly and soak it in water for 30 minutes. Later the drain the water using colander.
Take a pot and add water in it. Let the water boil and then add the rice, cloves, cinnamon stick, oil, lemon juice and salt in it. Cook rice for 80% and then drain it off to the colander. Keep the cooked rice in a bowl covered.
Making Biryani Gravy
Take a large bottomed pan or pot and heat oil in it. Add some onions and fry them till brown on high heat.
Once done, take out the caramelized onions and keep aside half for garnishing biryani and half for mutton gravy.
In the same pan, add butter, bay leaf, cinnamon stick, cumin powder, garam masala, ginger garlic paste and saute it well.
Add fried onions and saute it for a minute. Add tomatoes and stir it well. Let this mixture simmer until oil starts separating at the edges.
Add marinated mutton along with the mixture and mix it well. Add chopped mint and coriander leaves, half a cup of water and cover the lid. Cook mutton for 30 minutes on low heat.
Once the mutton is cooked, spread a layer of rice on the mutton evenly and drizzle saffron milk and caramelized onions on it. Add some chopped leaves of mint and coriander again and close the lid. Let this biryani cooked on low flame and cook it for 10-15 minutes. You can also put a tawa under the pot to avoid biryani from getting burnt.
The lid should be covered properly in order to trap the heat inside of the pot. This way biryani will become more flavorful and delicious. Once cooked, transfer this biryani into a serving bowl and serve it hot.
