Pre-cooking steps
Wash and soak basmati rice in water for about 30 minutes
To begin with, the Prawn Biryani recipe, take all the dry spices such as seeds of ajwain, fennel seeds, cinnamon, cardamom, and cloves, grind them to make fine powder
Marinate the Prawns
Take a mixing bowl, add cleaned and torn shrimp, turmeric powder, add 1 tbsp of ground spices which we prepared earlier. Add red chilli powder, half lemon juice, salt as per taste, ½ cup chopped mint leaves in the mixture and mix it properly. Also, add half a cup of curd and fried onions. Toss everything well with prawns and let the prawns marinate for 30 minutes and place it in the fridge.

Once onions are fried, add bay leaf, 1/2 tsp of biryani Masala, sliced tomatoes and sauté it well for one minute. Add the marinated prawns in the pan and spread it evenly on the bottom of the pan. Mix it well and cook prawn in the mixture on moderate heat for 3-4 minutes.
Add half cup of chopped coriander and mint leaves in the pan and mix it well. you don’t have to add water in the mixture. Once prawns are cooked turn off the flame and keep it covered.
Layering the Prawn Biryani
Layer the rice evenly on the cooked prawn. Keep the heat on low while doing this. And toss it gently 1-2 times in the pan or pot without breaking the rice. Add remaining caramelized onions, some melted ghee on the rice layer and sprinkle some saffron milk on it. Cover the lid tightly. Place a Tawa below the pot and Allow this biryani to cook on medium-high heat for 5 minutes. Once biryani is cooked properly, switch off the flame and serve it hot.
