Everyone loves red velvet cake but what about red velvet cookies that too gluten-free. Sounds amazing? So here is our special recipe of Red Velvet Chocolate Chip Cookies which are very soft, thick and chewy and completely gluten-free. Making these cookies recipes at home is very convenient and using simple ingredients.
To start with the recipe, firstly, Preheat your oven to 350 degrees. Arrange parchment paper in a rimmed baking sheet and set aside.
In a large sized bowl, add all the dry ingredients including flour, xanthan gum,cocoa powder, baking soda, cornstarch, salt, and sugar in it. Whisk all the ingredients together to combine well.
Combine the brown sugar and mix well without creating any kind of lumps.
Now, add softened butter, shortening, vanilla extract, eggs, vinegar and gel food coloring into the mixture and whisk well.
Mix the color well into the barter. The color should be a deep red as it will fade during baking. Add more color if necessary. Finally combine the chocolate chips and mix the barter well to create crumbly dough.
Scoop the dough into small equal mounds and roll into a ball. Place them on the prepared baking sheet keeping each ball 1 inches apart from others.
Refrigerate the cookies for 5 minutes to chill and then Place them in the preheated to bake to 10 minutes. Check the center of the cookie to ensure its doneness.
Once baked, let the cookies rest for 10 minutes to cool completely. Serve these hot cookies as a snack. You can also store them in an airtight container.
