What is the Russian Meatball Soup Recipe and how to make it?
Russian meatball soup is a super comfort soup recipe that can be easily made at home. This healthy and light soup is called as ‘soup s Frikadelkami’ to most of the dwellers. This soup can be prepared by some simple pantry staples but a combination of all these makes this soup extra delectable. Chicken is preferred for meatball as it provides a plump, moist and clean favor.
Tips to make Russian Meatball Soup:
- You can take any ground meat such as ground turkey, ground pork or beef for this recipe.
- In the end, add grated parmesan cheese on the top to make this soup more flavorful.
Take a pan, heat 1 tbsp of oil or butter in it and add a bay leaf into it. Combine onion, garlic, and carrots to the pan. Cook it on a medium-low flame and further season it with salt and black pepper. Cook it for about 5 minutes or until the veggies become tender.
In the next step, combine peppercorns, potatoes, and water. Bring the mixture to a boil and let the mixture simmer for 10 minutes on low heat until potatoes are cooked properly.
In the meanwhile, prepare the meatballs. In a mixing bowl, add breadcrumbs and pour milk over them. Let it stand for 5-7 minutes until breadcrumbs absorb the whole milk and turn soft. Add grated onions, dry herbs, garlic powder, egg into this mixture and mix it well. Season it with salt and black pepper and add ground chicken in the end, mix all the ingredients until well combined.
Take small amounts of ground meat mixture and make small balls (similar to the size of walnuts) and add them in the simmering soup. Add some extra salt in the soup if needed.
In the final step, add rice to the soup and allow it to cook for another 10 minutes. Check after 10 minutes, as rice and meatballs should be cooked through completely. Once done, garnish your Russian meatball soup with fresh herbs like parsley, chives, green onions, etc and serve it hot.
