Tostada is generally open face tacos. This recipe is a bite-sized version of a famous Mexican dish that can easily be made vegetarian or with chicken. To make this delicious Tostada bites, corn or flour tortillas are used as base. These tostada bites of shrimp make an easy appetizer for any party or get together to serve your friends and family members. These bites are easy and quick to make and can be made in bulk, especially when you are expecting large crowds.

Clean shrimps and pat them dry. Season the shrimp pieces with chipotle mix seasoning, salt and pepper. After that stir well to combine.
Take a small pan and add 1 tbsp of olive oil in it. Add shrimps into the pan and cook until they become translucent.
Around 2-3 minutes per side. Remove the shrimp from the pan and sprinkle some more chipotle seasoning and lime juice. Keep it aside
Make 20 small rounds from large tortillas using a round cutter. The size of the mini circles should be around 1.5 inches to 3 inches. Place these mini tortilla circles in the oven and bake at 350 degrees until toasted. It will take approx 3-5 minutes.
Once it is done, remove it from the oven and let it cook down
Making Guacamole paste
In the bowl of a blender or food processor, add peeled avocado, sour cream, ½ tbsp lime juice, cilantro, ½ tsp of salt and pepper and process until smooth. Your Guacamole Paste is ready.
Assembling Shrimp Bites
Add a dollop of this guacamole paste on each mini circle and spread gently over it. Add 1 teaspoon of salsa over it and place roasted shrimp on each mini tortilla. Sprinkle cheese on it and top it with diced cilantro and serve hot.
